Zesty Victoria Chia Cupcake

This orange and chia cupcake is perfect for any occasion. This cupcake is sweet ,tangy and delicious at the same time.

 

Zesty Victoria Chia Cupcake

  • 300g Stork or butter

  • 3 eggs

  • 300g self raising flour

  • 200g sugar

  • 1 teaspoon baking powder

  • 2 teaspoon chia seeds  

  • 2 oranges

  • 80g Lyle's golden syrup 

  • 100g butter

  • Gel Colouring of your choice

  •  20g caramel

  • 500g Icing sugar

  • 3 teaspoons of milk

  • 1 teaspoon vanilla bean paste

  • 100 ml Baileys Irish cream

Directions

 

  1. Place 1 orange in a sauce pan of cold water and boil until tender.

  2. Once the orange is cool, cut into chunks , remove pips, blitz with peel until smooth.

  3. Preheat oven to 180° C.

  4. Sieve self -raising flour , chia seeds and 1 teaspoon baking powder in a big bowl.

  5. Add eggs, caster sugar, stork , vanilla extract and orange pulp.

  6. Whisk until smooth and add into baking tins.

  7. Bake at 180° C for 15 to 30 minutes  depending on your oven.

  8. Allow to cool before adding your filling.

    Syrup

  1. Add the juice of 1 orange and golden syrup to a saucepan.

  2. Allow to boil ,until the syrup is thickened a little.

  3. Transfer to a bowl and allow to cool.

  4. Prick cupcakes with a fork or skewer.

  5. Drizzle the cooled syrup over cupcakes.

 Buttercream Frosting

  1. Beat butter until smooth and fluffy.

  2. Add in icing sugar, baileys, caramel, milk and vanilla paste.

  3. Add food colouring until properly combined.

  4. Pipe buttercream on cupcakes.
